Which is better?

Will they both support Ivy Bridge?

Yes they all support ib, and the asrock one is way better. If you want a comparable board I suggest either looking at the gigabyte z68x-ud3h or the ud4 version.

Any Z68 board in theory will support Ivy Bridge.

I am sceptical as to if this will be true in ALL cases.

A BIOS flash may be necessary before swapout to IB though.

Yep that is true, gigabyte already has the bios flash though.

Unless you are unfortunate and get an older motherboard that has been sitting in the warehouse for a while with an older BIOS.
