I am a bit concerned about the wires and how it will fit...

The GTX 780 will fit. About the cables, just try to tie them neatly and tuck them anywhere but below the GPU. I would suggest use zip-ties to tie them the cables together and just let it hang on the right side of the motherboard (make sure it's not covering any fans).

Are you keeping the ATI 8570D in your system? If not then 600W PSU is enoough. A single GPU PC will not need more than 600W, even if you're overclocking.
