I'm wondering if this pc build will run GTA 5/Arma 3 on max settings while still getting 60 fps

yup you can game at ultra 60fps which that config

Yes 1080p, also my resolution is 1680x1050

at 1680 x 1050 this pc is pretty overkill. its good you went with an nvidia card(cause nvidia cards are better than amd cards at lower resolutions. go with amd cards at higher resolutions). You will get a stable 60 fps in any game at ultra

Honestly with 970 in SLI you could probably play those at 4k, you only need 1

I just remembered that I got a new monitor its resolution is 1920-1080
