was wondering if this build would run iracing on full settings with no problem and if everything is correct have no idea really and if so how much more would it cost to set it up to run 3 monitor display?

Never, ever, ever EVER get an Xtreme Gear PSU, its the cheap house brand for a reason, the 800W unit has 60A between its 12V rails, which is about as much as a good 650W unit, it unfortunately is also an older lower efficiency design with passive PFC which says that its using tech that is 5 years old or more. Pay more, get something that isnt an overpriced doorstop.

One major suggestion about the build, ditch the X58 platform, go to an i5 2500K on a Z68 motherboard, it will likely come out a bit cheaper and will actually perform a bit better.

If you really want a 3 monitor setup you will need 2 higher end nVidia cards or one of the higher level AMD cards, a 6970 can do three monitor gaming, a pair of 6950s would give better performance.
