I currently have the motherboard posted above, I have windows 7 installed right now but tomorrow I am going to purchase a SSD Drive to use with my current 500GB harddrive so I figured I would reinstall windows and use 8.1

Since my motherboard is old im wondering if it will work with windows 8.1? And if so what would I need to do for it to work with windows 8.1

Also do I just plug in my SSD drive and the motherbaord will automatically read it?

Solution
Yes it will work with 8.1. It is going to depend on what ssd you get. Once you get the ssd REMOVE the other hdds when installing windows and make sure no master boot partitions are on the hdds. Format the ssd and you should be fine. For ssds i recommend 850 evo. It is a good all around ssd.

What do you mean by "no master boot partions" right now it has windows 7 installed on it and a bunch of files, but I would like to wipe everything from it, should I do that before I start the windows 8.1 process?

Yes. Before you install the new ssd wipe your current hdd and all the partitions including the mbr you can do this easy with dban or ubcd.
