I use an old AMD Athlon PC to act as a media server in my home, and it has been running fine for the past five years, but yesterday the PSU stopped working, I took a look inside the psu and there were bulging capacitors, this PSU was 235watts, and I have other 300watt and higher PSU's laying around, my question is can I plug any PSU into the motherboard?
 
definitely. capacitors do age, all though sounds like you had some bad caps. but slap a replacement in. as long as it delivers the needed power and had the right connectors there shouldn't be an.issue.

sounds lke its for a low power situation but some PSUs do suck. feel free to ask and give parts if you.like
