everything will work without problemsYes, but apps will typically use the GPU that the monitor is tied to if it launches on that monitor. So if you want games to use the RTX 2060 S, you need to make that monitor the primary one since most games don't have an option to choose which monitor to use.
There is a thing in Windows' Settings -> System -> Display -> Advanced Graphics option to say which GPU to actually use, but the above method tends to be pain free.
