I have windows 10 installed on my pc. I have made a Windows 11 to go usb stick to test it out (with accessing local drives turned off). Is there a chance that it will break something for example the actication key? I'm guessing not, but just want to make sure.

the idea is it runs from ram and the media it is stored on. so no, it won't touch the windows install on the pc itself unless you give it access to the drive and make changes yourself while there.

Isn't the activation key stored somewhere on the motherboard though? Just making sure it wont try to convert the key into a win 11 key or forget it

This only applies to computers from system builders. OEM keys may do this, or they may get tagged on Microsoft's activation servers with some unique ID on the motherboard.

I believe keys don't "convert", because you can retract an OS upgrade for some time.
