Windows 10,factory rest to windows 10?

OK here goes. We factory reset the little laptop ( HP, stream 11) from Windows 10 back to Windows 8.1, Or so we thought. Imagine Our surprise, when another version of 10 showed up! so question, is how, why, and whaaaaat? so is there an actual way to get back to 8.1, or are we just done??

how long ago did you upgrade from 8 to 10? If more than a month, maybe this is a blessing in disguise as after a month, your 8.1 licence becomes a win 10 licence.

Did you choose factory reset or just a normal reset?

Its been almost a year, however when we read the instructions it said it would take us right back to its original settings, we did a factory reset because it came with windows already installed, not sure what you mean by a normal reset. in the c drive the folder that had windows 10 update is gone, windows old still exist, im wondering if 8.1 is still in there.

right click "This PC" on desktop
choose manage
in next window, in left hand column, choose disk management
expand the window so you see middle column

post screen shot of what it shows. I will see if i can figure out if a win 8 recovery drive still exists.
