Windows 10 home shutting down programs

I'm sick of seeing programs being shut down when I leave my computer idle for a while. For example I leave my computer open to go have lunch and coming back to realize it. I can't even have some of the programs re-running in the background like my Anti-Virus and Nvidia Geforce Exp. I record games alot and then it turns out that Nvidia Geforce Experience is closed and there's no way to have it running in the background without restarting.
I've tried one of the solutions which is manually enabling Gpedit.msc and:
Computer Configuration -> Administrative Templates -> System -> Troubleshooting and Diagnostics -> Windows Resource Exhaustion Detection and Resolution.
and configuring it to detect and troubleshoot only. However I don't even get the Troubleshoot and Diagnostics drop down menu so I can't access those settings. This is a serious issue for me, any solutions?
 


I don't let it sleep, it's set to never. And I came to find out High Performance only uses more energy and heats up your components rather than actually giving performance difference.
Putting to sleep have caused problems for me in the past anyway.
