What software will this system be running?I am trying to choose between Linux and Windows 11 64 bit home and Windows 11 64 bit Por. It seems hard to choose given that at have a reason to choose either. If you have some recommendations, please tell me in the replies.

I will be running UE5 on this workstation, but since I have it installed on one of my storage workstations, I can copy it over as a .exe file that it is in. So, OS doesn't really matter much. Also, I am currently busy so I probably won't get the workstation yet for at least a year as this is going to take a lot of consideration. Can I also ask, I am running 256GB of DDR5 ECC memory. So, as I know, Windows 11 64 bit Pro supports more than 128GB of RAM but what about Linux.Or rather will be, since you haven't bought it yet?
When asking what OS, it helps to explain what you want to use the computer for. From your other thread it sounds like you're intending to use this to compile game code using Unreal Engine 5.
Is your idea for this game to run on Windows? In which case you'll probably find it easiest to run a Windows machine.
Still though, to be intending to spend so much money on a such a high-spec machine to build games using such a high-grade engine, and not be able to work out yourself what OS to use...

And Windows software doesn't work like that, apart from small, trivial applications. You can't just copy the exe to a different system and OS. There are many many other things needed.
It looks like you'll be needing WIndows 11 Pro. And a full install of the Unreal software.
