I recently had to get a new computer(Lenovo ideapad, not sure if the model is important, if so, it's a Z580.) but I had to wait until today to get it because it was then only available on Windows 8. I can't stand Windows 8, and I can get an install disk[Edit: For Windows 7] on Monday, but my question is, how exactly would I go about doing that, and what would it do to the computer in terms of dual-boot, or cross-compatibility, or something else?

Well, you have a few options. It would be best to get rid of it completely if you never plan on using it. I believe there is an option to downgrade if you have Windows 8 Professional. If not, you'll have to format your HDD, then do a fresh install of Windows 7. If you'd like to keep both dual booting will be your best option. To dual boot just create a new volume and install Windows 7 on it.
