So my question is what happens if for example say if your deleted your "My documents" folder from "C:\Users\Yournamehere" how would you get it back without going to the recycle bin?

Well, if it was just "recycled" then go to the Recycle Bin and restore it.

However, if it was deleted to bypass the Recycle Bin you are going to need recovery software, of which there are plenty available, some of the free ones being dubious in nature.
