Wire for gigabit ethernet and telephone

I'm putting in a pool house in the back yard and want to have telephone line and gigabit internet. I was told that i need to run two cat5's because if you run telephone and internet on a cat 5, there's not enough wires left for gigabit.
Is there another direct burial wire that will accommodate gigabit and telephone all in one or do I need to run two sets of cat 5 to have gigabit?

From all my research, Cat5e will do just fine.
Cat6 will do 10Gb, but only over shorter distances. To get the same 100 meter distance for 10Gb, you need Cat6a, at significantly higher cost.
Gigabit ethernet needs all 4 twisted pairs to work correctly, leaving your cable with no additional lines, if you accept the bump to 10/100 mbs (along that trunk only) you will be able to get the ethernet down to 4 lines (2 twisted pair) leaving lines for your phone. Alternatively you could run the cat 5 and a cat 3 line for phone.
 
Ok. Thanks. So I will give the gigabit its own line. Now I just realized that PoE would be nice for a security camera and who knows what else in the future. Is Cat 5e the appropriate cable? Is there something better to consider?
