The Witcher 3 recommends an i7 3770 @ 3.4GHz and a GTX 780.

I have an i7-2700K @ 3.50GHz and a GTX 780.

Do you think I'll be ok running it at 1440p, or should I invest in a new CPU or GPU?

Or will overclocking my CPU or GPU be the best way to go? If so, could you please direct me to somewhere that tells me how to do that?

Note: My motherboard doesn't support SLI, so I can't just get another 780 to improve performance.

Thanks!

upgrade will always be first priority if u have the budget.. but first try the cheaper option(i.e. overclocking) and if it doesnt give any returns then go for the upgrade

I'm asking what would give me the biggest boost in performance, a new GPU, or a new CPU?

What processor would you recommend and how much of a performance increase do you think I'd get? (Thanks for answering all this!)

no problem .. here to help.. anything above 4690k will give boosts.. 4690k and above are hyper threaded.. which helps in games alot

The cpu and gpu are fairly well matched. Witcher 3 is still pretty new so not a ton of benchmarks out yet. Your 780 has similar performance to the gtx 970 in some games, falls behind a bit in others by 10-20fps. The gtx 980 is even further ahead. Your cpu should be fine, if you're interested in overclocking it I'd recommend reading through some guides. They'll give you an idea what testing software to use, how to go about it etc and you'll want a decent aftermarket cooler depending how high you overclock it. The 2700k is only slightly behind the 3770k in most benchmarks.

As far as hyperthreading, the i7 2700k already has ht. None of the i5's including the 4690k have ht. Since the 2700k and 3770k both have the same base and turbo speeds along with hyperthreading, the only difference between the two is efficiency and slightly higher ipc performance. This won't necessarily translate to witcher 3 but at least gives somewhat of an idea the performance difference between the two.

Some differences between the 780 and 970 gpu are here

The slight difference between the two cpu's, yours and the recommended could likely easily be made up by a moderate overclock. Your cpu is still above the minimum requirements and usually when gaming at higher resolutions more of the workload is placed on the gpu than the cpu because it pushes the gpu to produce the rapidly refreshing shapes, lighting and textures in higher detail over a larger 'field' than it does at lower resolutions. If you struggle a bit to get the fps you want try lowering the resolution or details a little.
