The gaps are a bit unsightly though.

How about for the next version, build one of addressable LED strips.
Model the head as being made of flat slices laying on top of each-other.

Mount into a 3D-printed mask with smooth outer surface that would act as diffuser.

However, the slimmest LED strips I've found has been 4 mm, and I can imagine it would have low frame rate with every LED in each strip having to be addressed individually
 
I think it's good enough to fool all the cameras with Vaseline smeared across the lens, which is like 99.9% of all cameras pointing outside, apparently.
