Hi, I have a Sapphire Radeon R9 280X, but I want to know if I should change it for a Gigabyte GTX 970 G1 Gaming or GTX 780 :)

It does worth going to something like 980 or 290X.

970 is a great card but going from 3gb to 3.5gb card isnt worth it if you think about the future. Same goes with 780 3gb.
Probably not worth it in your case. The fact that you have an FX-6300 may create a bottleneck and you wouldn't be able to take the full potential of the card. Based on your setup, I'd look at adding another 8GB stick of RAM so you can utilize dual-channel speeds and maybe add an SSD. That would give you a more well-rounded base.
 
A strong overclock on the 6300 will balance just fine with any single GPU card, even the 390X (based on the leaked performance numbers).

Used 780's are going for ~$175 on Ebay. If you bought one made by Asus, Gigabyte, or EVGA, you'd have at least a year and a half left on their fully transferable warranty. You could sell your 280X for about the same amount and get a free (albeit slight) upgrade.
