There are really no benefits to any dual CPU configurations for gaming because there are no games optimized to take advantage of dual CPUs or even use them.
Plus, that Xeon CPU architecture is older even than your Sandy bridge i7, so I'd stick with what you have or get something much newer.
That Westmere Xeon configuration would actually be a step backwards.
