Would I need a GTX 1060 6GB or a GTX 1060 3GB with Ryzen 5 1600.

Either one will work fine. But I would suggest the 6gb. Some purple/sites are essentially saying that while the 1060 3gb is a good card, that at 1080p it can start running out of vram. So basically the 3gb gets filled up as you start turning up to many settings and effects which can cause stutter in games and things unless you turn down graphics settings. So between those 2 cards, if you want the one that will relevant longer, I would get the 6gb card if you've got the extra cash for it.
