Right now it's between a ddr2 motherboard or a ddr3 motherboard.
I edit and play games, will I noitce a difference in speeds with same size RAM?

Quite a while from the looks of it, it has been "being phased out" for a few years now. If you are building a new system i would suggest going for DDR3 so that you can reuse it in a few years, but if you have an existing system with DDR2 there is no reason to upgrade.
Nope, the performance difference between DDR2 and DDR3 really only show up in synthetic benchmarks, in real world applications the difference is generally about 2% at most but it goes back and forth between the two as DDR2 has lower latency to counter DDR3's higher speed.
