Would it be better to have one 8gig stick of ram or four 2gig sticks

Neither.

You should get two 4GB sticks. This will enable you to run in dual channel mode and allow you to upgrade later on.

Make sure to buy them in a pack, so they're guaranteed to work together, even if you buy two separate sticks that are the exact same model, they're not guaranteed to work together.
