Hi !

I'm a noob in the NAS world and would like to have one that is good for me. I have a few questions and a need a few advise too !

Right now i'm using a Terramaster D5-300C. The quality is mediocre and I would like something better and suit me.
I'm using this for keeping files (movies/series/music/anime/picture) and I use my hard drive indivually instead of just merging them all.
I'm using Jellyfin as a server to have all my vids on my TV upstairs. Nothing else connect to it.
I have 30TB of space for all my drive and almost 20TB is already in use (and more to come)
I would like to have space for a copies in case something went wrong.

Would it be better for me to have all my HDDs merge into one instead of running them all individually ?
What the best bay capacity I need ?
Which NAS compagny and model to choose ?

I have a 4 bay QNAP TS-453a (2017), and 2 external USB connected 4 bay modules.

Would it be better for me to have all my HDDs merge into one instead of running them all individually ?
Depends.
Currently, my setup has both.
4x drives in JBOD, and the other 8x drives as individuals.

What the best bay capacity I need ?
The more the merrier.

Which NAS compagny and model to choose ?
QNAP or Synology

There is no definitive 'best' configuration.
The main thing you want to have is more than one copy of your data.
That can be done in MANY configurations.

For commercial NAS, either QNAP or Synology. Thecus and Asustor are the other players in the commercial NAS market. I have two Synology NAS units on my network. @USAFRet has QNAP. Both Synology and QNAP have "test drive" webpages where they provide an interface into a virtual NAS so you can test drive their software.
A NAS should be wired connected to your network. 2.5Gb is becoming more common and may be a feature worth investigating. If your NAS will be adjacent to your main network hardware, you might consider 10GE for your NAS.
20TB of data will take a while to transfer. You also need to decide what you need to backup. A NAS is not a complete solution to all problems.
