I have a case that has a button that lowers the case fan speeds, it gets significantly quieter, but I’m a bet worried. I game a lot and, although I would prefer it to be quiet, I’m worried that having the fans at low speeds might shut my system down because of overheating, if the system is getting too how will the fan speeds go up again? Or will they shut the system down if it gets too hot? Should I ever lower the fan speeds?

I can't really tell you the answer to this. It may or may not. Use a monitoring software such as RivaTuner to keep track of your temps (especially CPU) while you're in this "quiet mode." If your CPU temperature gets into the 80s under load, you probably shouldn't use it. I wouldn't use it anyway as I prefer to have the best temps possible at all times, but I sacrifice silence for that.

Update your post to include full hardware specs and OS.

The fans should increase speed as temperatures rise unless that function is disabled or otherwise not working. If the CPU gets too hot it should shut down on its' own accord.

Are you able to monitor the fans and temperatures?

Just make minor adjustments as necessary to balance noise and cooling.
