My current rig :
GPU-GTX 750 Ti 2GB
CPU- FX 6100 SIX CORES
RAM - Kingston Hyper X 8GB 2x4 1600mhz
Resolution - 1360x768

If I buy GTX 980 6gb will cpu bottleneck it too much or I could play games on 60fps?
My friend has FX 4150 and gtx 1060 6gb and he plays most of the games at ultra above 60 fps so could I also play games on 60 or above 60? Let me know.

Your CPU WILL bottleneck the 980 at that resolution, maybe buy a new monitor? Higher resolution will put less stress on the CPU. (will still bottleneck at 1080p) OR maybe it's time for a whole new setup if you have the money. That CPU isn't any good these days.

And will I get stable fps at ultra in one of the most unoptimized AC games AC odyssey?

i don't know if 28-35 fps is considered stable.
Nvidia Maxwell gpus haven't aged well considering the 980 was almost as good as the 1060 6gb couple of years ago
