It's supposed to be a gaming pc for around 2000 euros, the 2080 is supposed to be a 3070.

I have just one concern: If you want to overclock that cpu, the NH-U12S isn't really adequate for it - stock operation is perfectly fine though.

I do not know why Noctua has those 10th gen cpus listed like that on their compatibility lists, but that is their compatibility list for the 10600K.

Knowing this, and you're still ok with it, . I've got no other concerns with the build.

it will definitely work well is there a reason that you need 32gb of RAM? i would get 16gb of 3600mhz or faster RAM instead.

It's a little for future proofing: I think I might need it for some video rendering but I'm not sure

IF you're going to overclock.
It is a hobby, and not a 'one and done feature' like it often gets advertised as. It's an added expense(beefier cooling, motherboards) for little gain, other than one enjoys doing it.

I have thought about doing some overclocking so I think I'll find a better cooler
