Build Advice Would you change anything in this build and what kind of display would you suggest?

Hi guys,

I'm thinking about a new PC and this is what I came up with so far and I was wondering if everything is at the same level in it or should I upgrade something or downgrade. The purpose would be gaming mainly and light editing work (both premier pro and photoshop). And I'm also struggeling to find a suitable display for the build....I'm thinking 1440p, 27" but have no idea which panel is the best for gaming or should it be 120Hz or 144Hz or higher.

The build so far:
Motherboard: ASROCK X570 Phantom Gaming 4
CPU: AMD Ryzen 5 3600X (with stock cooler, not planning to overclock)
Memory: HyperX 32GB Fury DDR4 3600MHz CL18 (to be honest I don't care about brand, since all memory sticks have the same supplier, I'm only looking for 3600 MHz and 2x16 GB sticks)
GPU: GIGABYTE GV-N207SGAMING OC-8GD GeForce RTX 2070 8GB GDDR6 SUPER GAMING OC 3X (but its just temporary, until 3070 releases, but its the same pricerange until then)
HDD: Seagate 2 TB 7200 rpm
SSD: 2x CRUCIAL 1TB P1 M.2 PCIe M.2 2280 CT1000P1SSD8 (not sure about this one, cuz numbers are crazy high in this price range and thats kinda sus)
PSU: COOLERMASTER MWE Gold 750W (again just an example, only thing I'm looking for is Gold and 700W+)

So thats around $1800 and I'm not really sure how much should I spend on a display I guees the chepest one that is decent, so around 400-500$ maybe?

Any suggestion for part swap or display is very appreciated.
