I am building a system for my sister and using many of my leftover parts/components.
What I need is a AM3 CPU with 3GHz or better.

madmatt30 has it spot on, you can definitely run just about any of the FX chips -- any except the FX-9000 series, that is (which you don't want anyway, unless you need a space heater to keep your computer room warm).

I don't know about the FX-6300, as it doesn't offer a lot of improvement over the lower-end 3.0+ GHz Phenom II chips (http://www.tomshardware.com/reviews/cpu-hierarchy,4312.html). A nice FX-8320, 8350, or even 8370 will be a good choice for that board, & leave you with plenty of cores to work with (FX-8320 is basically the FX-6300 with 2 more cores, FX-8350/8370 are basically the FX-6350 with 2 more cores).

I'm assuming the limitation is due to the motherboard you're using, since the AM3 chips are going to be much more difficult to find than the AM3+ chips. Knowing your motherboard model would help in selecting the best AM3 chip to suggest.

That being said, you should be considering a Phenom II X4 940 to 980 (Black Editions) for a quad-core CPU, or the X6 1075T/1090T/1100T (Black Edition) for a hexa-core CPU. Going with the Black Edition CPUs gives you the option (depending on your motherboard) to also OC them.
