Xbox Series X Controller via Bluetooth randomly stops responding and I have to press Alt+Tab to fix it ?

Also I tried almost everything I found online but nothing worked, I updated the controller from the Xbox accessories app and updated my Bluetooth drivers.

This problem only occurs when using Bluetooth instead of cable.

Since you didnt spell out what you actually did to troubleshoot, I have to ask did you change batteries in the controller?
I did many times but didn't work, I messaged someone who posted this same issue a few years ago and he told me he only managed to fix it by buying the Xbox wireless adapter, he said it was a Bluetooth dongle issue which I also use although a new one, the Unitech 5.3 Bluetooth adapter
 
I would guess the usb port your bluetooth dongle is connected to is going to sleep and not waking up.
general fix would be to update the bios (to get usb fixes) update the cpu chipset drivers for your cpu to get usb fixes for direct USB support. On older machines you might have to update the usb 3 drivers for external chipsets provided by the motherboard vendors.

The bios update will also fix bugs in the sleep states. NOTE: many bios have a setting to turn of usb ports in the bios after some timerout as required by the european union regulations to save power on computers. make sure the port is not being put to sleep by the bios. you can also go into windows control panel, device manager, select the device and tell windows not do put it to sleep to save power. (work arround)
