I wouldn't get the Xeon, it is very outdated and getting a motherboard for it will cost much more than it's worth even used. I suggest just going for something newer.

The Xeon e5530 is a server CPU, it requires very specific hardware and most commonly needs ECC registered memory. It is capable of gaming as you can here (https://www.youtube.com/watch?v=epIlB49SNTI), but it needs a server motherboard unless you custom flash one (not recommended), and most of them aren't normal form factors.
That is on the fairly old side (Nehalem) so while it may be usable for gaming, I wouldn't recommend it, personally. You'd be looking for LG 1366 socket motherboards, which I believe is the X58 chipset.
