Yet another sudden shutdown

I got a 5 year old rig that I am upgrading gradually. About a month ago I installed a new CPU fan and back fan. That is the most recent addition. Today out of the blue (to be more precise it was running normally all morning under heavy load as always, left it in standby for about 1 1/2 hrs) it shutdown while launching a game (entering menu). Kept restarting when put under heavy load (tried running different games). I immediately thought about PSU so I ran some tests, unplugged the 2 extra HDDs and the back fan (doesn't help much anyways) but the problem persisted and all values seemed normal in various monitoring programs (screenshot from HWmonitor). My guts still say it is PSU related but don't want to invest in a new one before investigation more.

Edit: PSU is a store brand 500W and according to HWm my total max consumption is around 223W (maybe I am reading this wrong and there are more consumptions???)

Edit #2: ran speedfan for some time now and although HWmonitor disagrees, it shows wild variations in the +12 line. It hovers around under 1V and does spikes at 12V. how bad is that? or is it unreliable software?

Edit#3: ran OCCT tests for the PSU and the CPU. both failed at a point, the values I could look right before failing seemed normal. Both times the pc crashed after a few seconds. Something I noticed (which happened for the past few days when on high load without shutdown) right before crashing point I can hear some crackling noises from the speakers that are on the onboard MoBo sound card but not when I have my USB headset. Sounds a lot like a short of somekind, like if you adjust the cable jacks or if they are starting to break. That is the biggest clue I can find....

Questions:
1. Is there any other program I can use to test PSU more thoroughly?
2. Is there any way/program to log all info until the shutdown so I can reboot and review i.e. max Wattage consumption, max temp etc?
3. Any other tests or programs to examine CPU and RAM for faults?
