Question Z600/800 Project

So I recently bought a HPz800 and a z600 that I am hoping to use for gaming and financial trading. I set them up and updated the BIOS and they both worked really really well. For about 2 weeks. Then they started slowing down. Now they are so slow that when I watch videos online they both frequently lag and the trading software that I use is indicating data latency issues.
Can anybody please offer me some pointers as to what I can check and what I might change. Happy to supply any system info that is relevant.
My background is that I have rebuilt/refurbished maybe 100 pcs (not workstations) but I am self taught so my knowledge likely has big gaps in it.

What might have changed since all was well?

As to the workstations, I think they are unsuitable for your needs, either as a gamer or as a trading pc.
While the processors have 12 processing threads each, and there are two such processors, the individual cores are very slow.
Run the cpu-Z bench test and look at the single thread performance rating.
It should be something like 388:

The workstations are good only for batch apps that can fully load all cores.
Apps like trading or gaming need good single thread performance.
A minimal $65 12th gen processor will have double the single thread performance.
And, I think the units have proprietary motherboards, power supplies, and ddr3 ram so reusing parts is not reasonable.
