OK I figured it out. Turns out that Win+CTRL+C turns on a color filter, which is grayscale by default. I must have accidentally pressed that while trying to copy something. lol

What on earth... I've never seen this. My windows has lost color! The monitors and GPU are fine. I get color during an administrator check (or whatever it's called, when it asks you to allow something as admin) Rebooting didn't fix it. I'm going to try re-installing the display drivers now...
