8 hours of memtest last night gave me no errors - so I'm thinking RAM is fine.

I was thinking PSU as well, however it is a good PSU with a 10 year warranty on it. I'm going to run Memtest all night tonight and see if that shows any errors to rule that out.

System is very clean

The PSU is several years old 11/2018. I am a video editor so yes I render with it. - correct, nothing in the event viewer except for the system shut down incorrectly log.

I am running the latest BIOS version. As far as anomaly's with RPMS - It's almost more than that, because when I was working with the "standard" fan curve, the fans were stuck at a certain RPM after a while. No amount of CPU usage or increasing temps would make them budge one way or another...
