    Looking at your processing power requirements, I think you do not need a more powerful GPU but a more powerful CPU. You should look at something like 2600K, 2700k and 3770k. A good and sufficient GPU for you would be 6850, which you should be able to get it cheap.

    I read somewhere (long time ago, didn't bookmark the link) that by using both the SLI bridges would yield a small improvement in performance, though it might not be considerably higher. I don't know the logic but if you have an additional bridge, it wouldn't hurt to use both.
