Maybe your games are capped at a certain FPS in the Nvidia Control Panel? Maybe the games themselves? You mentioned a windows update, maybe try to uninstall it if possible if you didn't already do so.
Partly fixed, reapplying thermal paste to gpu reduced the delta to 10-15 degrees. Seems like the first guy didn't reapply it correctly so i went to another dude and he reapplied the paste which works fine now for 7 days already.

To clearify things for those who don't like to read at all.
Problem:
Sudden increase in wattage in the same game of around 50 watts
Sudden temperature increase of around 20c for the hotspot
Delta increased from 10-15c to 25-40c
Even when undervolting hotspot reaches 93c in benchmark...
Undervolting will help yes, but you can also try using a different perhaps even better power supply, because if your power supply is faulty it might also cause coil whine on GPU.

I also had a restart problem with my pc not even a month ago and i fixed it by changing my psu. The faulty psu made my gpu have very loud coil whine but once i upgraded the restarts stopped and the coil whine dimmed by 90%
When i played Medieval Dynasty 3 days ago at 1080p Ultra, wattage was at most 110w and that only when the game needed the most resources, so average it is 80-90w.
Temps were:
GPU 55-60c (can't remember very correct, so maybe higher but NOT lower)
Hotspot 76c at most (i always focus on hotspot...
