Uhm, did you put the cooler back on with the "old" thermal paste after checking it? If yes, then it's no surprise, as then there are probably some air bubbles enclosed within that paste from when you put it back on. Air transfers heat horribly, and thus the temps would rise.

Is the cooler properly mounted and sitting tight on the CPU? My 1600 tends to spike temps in idle when openeing applications, but these spikes are very short and the temps go back down after a few seconds. It shouldn't stay that high constantly.

What keith said. For more gaming performance, just upgrading the GPU should be sufficient, the 3570K should still be more than capable.
