drive partitions

Hello there, I was just wondering what difference would it make in performance or utility. If i buy a 1TB SSD and make 2 partitions of it. or If I buy 2 SSDs of 500 GB each? Which is better? What are the pros and cons of each? I'll buy accordingly. Thanks.
