Question 12700K...is overheating causing my system to restart?

12700K on a Gigabyte z690 Auros Elite cooled bay a Lian Li Galahad 360 AIO
My system has been restarting while gaming/while running stress tests in Cinebench...
I was worried it might be CPU tempretures causing the freeze/restart issue... as CPU package temps were going up to 84/85 degrees with single P core temps perhaps a degree higher (according to CPU ID HWinfo)
Though that does seem high...it doesn't seem high enough for a system crash...

I undervolted the CPU by 0.05v yesterday which has bought the temps down (idle at c 5 degrees above ambiant) up to 80 degrees max on a Cinebench stress test...yet again though...crash and restart afte c27 minutes on Cinebench stress test but temps don't appear to have gone above 80 degrees which doesn't seem high enough for a crash/restart

What else could be causing it?

It only happens when CPU intensive gaming (IE: DCS Flight Sim) or on stress tests (Prime 64 and Cinebench)

Is it even overheating that's causing me to restart?
It just crashed/restarted 20 minutes into a 30 minute Cinebench test with temps never going above 80 degrees for package or any single core on the CPU...surely not hot enough for a crash/restart?
Could it be PSU related but my PSU is less than 6 months old and a Corsair RMx (2021) 850 W
Cinebench is a CPU only test...GPU is idling - so would it even be drawing enough power to cause problems?

That said it DOES seem to be CPU related as my system will happily run a GPU Test (Furmark) for 30 minutes with no signs of instability - which draws much more power than the CPU (Max 361W according to HWInfo)
