The Ryzen 2700(x) is a BBFB(better bang for buck) than the still overpriced 9900k, plus it comes with a good cooler, eliminating the need to buy your own, thus saving more money. But IF you can wait about another week and a half, Ryzen 3700x should be available, also at a better price than the 9900k. *But you'll likely have to request a boot kit from AMD in order to use the 3700x with a B450 board, as the bios won't have been updated. The X570 mobos are Ryzen 3000 ready out of the box, but they're more expensive than the B450/X470 boards.
Away with HDDs🇳🇴 SSDs are the way forward! There are 2x 1TB ones in the above spec!
1080p is still the most widely used resolution, and while both the RTX 2060 and RX 580 can easily handle it at high refresh, the RX 580 has BBFB.
A 750w power supply is too much, as either of the 2 builds we put together don't even go over 400w. Having that much spare headroom isn't cost effective. The 550w I've picked out is a better option.

There was enough spare budget left to change the remaining peripherals for something a little nicer...
If you're not a fan of curved monitors, then replace those two with 2x Acer XFA240 bmjpdr.
