Will the Hewlett-Packard 1495 motherboard support 2 1920x1080 monitors?
NO doubt it will slow down the pc, but will it do it enough for me to not be able to use it?

Then no, it only has 1 video output. Best option would be to buy a cheap gpu($20-30) that supports multiple monitors.

Well VGA supports 1080P and so does DP so as long as the monitors themselves support those connections you should be fine.
