2 smaller drives or 1 larger drive?

I'm currently selecting what hard drive I want for my build (I'm on a budget so I can't go for a SSD 🙁). However, I can't decide if I want one or multiple hard drives. Does it improve performance or does it not matter? Do multiple drives cost more than one drive?
I would like a total of 500GB-1TB of storage. I have a budget of ~70 dollar.

Also, if you have any recommandations for particular drive, please tell me!

Well, if you want 500gb-1tb of storage I would suggest just getting one big 1tb harddrive.
