I have an HP Z440 Workstation with an Intel Xeon E5-1650 v3 - 6 Core CPU. I'm wanting to install 24GB total and I see the 6GB sticks going in pairs of 3 for cheaper than buying 8 4G sticks.
I'm not sure how installing them in 3's effects things, but I read that for maximum performance I should be installing them in even pairs. I just wanted to confirm before making a choice.

your workstation supports 4 channels memory , it is a waste not to use it.
quads not pairs even :)

I advice you to skip 24 GB and get 32GB 4x8GB

get four 8GB each

Also get 2133 speed . minimum

you need Registered ECC Memory for this as well

and make sure you populate them in the right sockets to use them in Quad Channel mode . read the Manual.
