Is 256 GB enough space for windows 10 and for MS office applications ? I just need to run Ms Word, and Excel. May be Skype a bit.

256GB is plenty for the OS and Applications.

My father has installed Windows 10 home, the full MS Office 2013, Mozilla Firefox, Malwarebytes, Adobe Reader, and maybe a few other minor things.

He basically has a few Word and Excel documents, and does most of his stuff online. His entire install is, I think, at under 40GB currently.

I mean, with updates, caching, and so forth, you should keep an eye on usage, but I think you'll be fine.
