2x 4GB vs 1x 8GB?

Would it be better to use 2x 4GB vs 1x 8GB RAM, where I could leave the current 2GB installed, for a total of 10GB, and have room to upgrade to 16GB in the future?

normally (and there are many opinions on this, and this is mine based on a lot of findings and research I personally done)

2x4gb match pair, will run in dual channel mode and will be faster (and were talking nanoseconds here) than 1x8GB single sided sdram memory
I cannot attest if your Motherboard can run 16GB or not, you have not mentioned what make and model of motherboard you are running.
