Hello I have this PSU: https://www.bequiet.com/en/powersupply/583 (be quiet! DARK POWER PRO 11 1000W) and I have a 2x Molex to 8pin adapter. I have PCI-E risers with 6 pin slots and don't have any PCI-E cables left for a RX 570 (8pin).

I've read A LOT about this topic and all I read is: "It's NOT safe". Most of those topics were people with weak PSU's.

Is it safe in this case or should I get 2x Molex to 6pin adapters for my risers?

Solution
well, then max. usage: 900Watt without CPU, RAM, HDD,...
still the same calculation.
With this PSU you can try with the adapters, because it wouldn´t damage other components if it dies because of high load over time.
How many riser cards and RX570s are you using? six?

Keep in mind that every riser card slot will need 75Watt and every RX570 additionally at least 75Watt to get 150Watt, better calculate with 225W because the cards can draw up to this value with 8pin 150Watt + PCIe slot 75Watt
225Watt x 6 = 1350Watt.

Get a power supply that gives you that wattage, or it´s not safe
