Been running into a ton of problems installing my new m.2 today, and would appreciate some help.

I had a Samsung m.2 installed in raid 0 before, but as I tried to link the 2nd one, something went wrong. I tried 5 ways from Sunday trying to get it back up and running. Flashed bios, SATA mode, fresh windows install. Nothings worked so far.

2nd GPU is not recognized when windows is recovered. Windows fresh install is greeted by a non-discover able ssd disk and no drives to be seen.

I've tried both ports, both SSDs are functioning alone.

Specs:
2x GTX 1080
2x m.2 Samsung NVMe (1TB, 512GB)
ASUS z270-A

I've had this problem before with my 2nd GPU before, but I fixed it with a bios flash in the past.

There's no point in raiding two different sized drives together. Raid will only use the smallest size drive when creating the array so you would wind up with (516gb+512gb) a 1tb drive... which you already have. Plus with raiding you would lose the ability to boot from them.

Raid also requires a different 'format' of the drives and warns you that all data on the drive will be erased.

Have you tried resetting the bios? I'm thinking that some setting is still not back to normal.
