Question 3.5mm jack into HDMI-ARC or Optical tv port ?

I'm going to purchase the following 4k tv:

I currently plug wireless headphones into a tv 3.5mm headphone port but the one above doesn't have one.
I've done a bit of research - could anyone confirm i'm on the right track ?

If i go optical to analogue:

Further reading sees reports that i should by one with a volume control to avoid issues with fixed volumes so i've shortlisted one like this:

If i go HDMI-ARC to analogue:

So- My questions are:

1. Will these convertors preserve sound balances such as stereo or surround sound and play them in my headphones or does it just get reduced to a mono-analogue signal ?
2. Which is better: Analogue to HDMI-ARC or optical ?
3. Can anyone recommened a specific convertor device based on user tips ?

Don't worry about audio return channel, keep that port open to something else that may arrive. There won't be any difference in quality vs hdmi or optical cable to your converter.

Go for your initial plan going optical to rca/headphone.
