Will my system handle 3 monitors at 1080p 144hz? The 3 monitors I will be using are msi optix 24" curved monitors, model number g24c
My system is as follows

Cpu: i7 8700k
Mobo: Msi Krait Gaming z370
Gpu: 5700xt Red Devil
Ram: Corsair Vengeance LPX 16gb 3200
Psu: Corsair 750w

It depends on what you do with the 3 monitors, just running 3 monitors won't cost much GPU processing power suppose you have them all hooked onto the GPU ports, monitor refresh rates and response time depend on the monitors themselves.

To fully ustilize a 144 Hz monitor your PC needs to be rendering graphics at 144+FPS so you can fully enjoy 144hz gaming on 1 monitor while having the other 2 doing non graphics related tasks. However you can't have all 3 monitors running 3 games at 144Hz at the same time because your GPU most likely won't be powerful enough to handle 144FPSx3=432FPS at all time especially with A+ titles.

I'm going to be playing one game on all three monitors. Basically just stretching the game out from one monitor to all three

This guy was able to run a racing game on 2 1080P monitors at 130 FPS maximum using Eye Finity mode I dont know what the game is but it looks like it doesn't require much rendering as many other top titles would. So if you want to run 3 monitors you might be able to achieve around 100 FPS on the game he was playing, could be lower or much lower on more depending titles such as PUBG and Fortnite etc.. However you should be able to achieve I'd say at least 60 FPS on most games this way.

Remember 3 1080P monitors are basically 3 4ths of a 4K monitor, even the most powerful GPUS like 2080 TI can barely reach over 100 FPS(short of 144Hz) on many of the recent games at that resolution.
