Is this even possible? I ran Prime 95 for 20 minutes or so. No errors

No it's not...but CPU-z is not very good for monitoring Ryzen CPU's because it's very slow and doesn't react well to dynamic CPU's. Get HWInfo64 instead.

For CPU core voltage look for a sensor reading CPU Core Voltage (SVI2 TFN). Look at the average reading because it's never steady and moves around quite a bit as Ryzen CPU's are extremely dynamic.
