3x4k AOC monitor workhorse - low end gamer - sanity check pls

Hi. I work from home, devops/dba/stuff, nothing too graphics intensive, just need the workspace. Current system has been great but is a bit dated, 2 of 3 monitors are slowly dying, and blue screened recently; time to demote to backup. Has been a while since I built anything, hoping you folks can share your thoughts.

Tentative build: i7-5930k/64gb 2xgtx960/4gb 3xAOC 4k

Main priorities are value, long term usability/reliability. I really want the ultra m2 SSD which limits the mobo choice. Could manage w/5820k and 32gb ram, 850w ps, but savings < $400, beefier build worth it to me, should allow upgrading video someday, right? Case matches existing so must have. I don't game much anymore, ok with lower settings and middling frame rates when I do. Nvidia loyalist and GTX960's seem to be the best value atm at $210 ea. Haven't been following prices so not sure if the 1080 is already pushing prices down or if now is just a bad time. I'd gladly wait a month or two if I can get 970's for this price by then, but if it's a matter of $50, I'll just eat the loss.

Main concern is the monitors. AOC's are 28"/4k/1ms, $350 ea. Just no other competitors at that price. Asus, same stats, $480 ea. Viewsonic 27" IPS, $570 ea. I have had great luck with Asus and Viewsonic. AOC has good rep, reviews, just nervous I guess...

Thanks Sqrl. I'm currently running 3 1920x1200 monitors on a single 770/4gb, tried to ballpark from that but didn't account for the sheer number of pixels (7M to 25M). I'll just have to adjust my expectations to working on 3 monitors, gaming on 1. I can't see spending $1400 on 1080's but the 1070 coming out soon sounds like a screaming deal.
